Judge Roy Bean kept the law west of the Pecos with a whiskey glass in one hand and a gavel in the other. We keep his spirit alive the only way that matters—in the bottle.

Our straight bourbon whiskey is finished with charred pecan wood, a tradition as Texan as the man himself. The pecan smoke rounds the edges, adds a sweetness you can't fake, and leaves a finish that sticks around like a good story.

90 proof. No shortcuts. No apologies.

How it's made
01

Mash

A grain bill built for character, not consensus. Corn-forward with just enough rye to keep things interesting. Cooked low, fermented slow, and left alone until it's ready.

02

Distill

Small batch copper pot distillation. We take a narrow cut—only the heart of the run makes it through. What doesn't measure up goes back around. No exceptions.

03

Finish

Here's where it gets interesting. After aging in new American oak, we finish with charred pecan wood—native Texas pecan, hand-selected and fire-charred. It adds a layer of smoky sweetness you won't find anywhere else.

The lineup

What We Pour

Golden Hour

Sunset · Dock · Good Company
Some bottles belong on a shelf. This one belongs on a dock at sunset with nowhere to be and nothing to prove.

The Old Fashioned

Bourbon · Cherry · Orange · Bitters
The cocktail that never needed reinventing. The pecan finish just gave it a reason to brag.

The Pour

Neat · On the Rocks · Your Call
Best enjoyed slow. Neat or with a single rock to open it up—the pecan finish does the talking either way.

The Outlaw

Bourbon · Big Ice · Candied Bacon
Candied bacon draped over a sphere of ice and two fingers of barrel strength. Not subtle. Not trying to be.

Pecan Smash

Bourbon · Mint · Crushed Ice · Simple Syrup
Fresh mint, crushed ice, and a heavy pour of 90 Proof. A julep with teeth—the charred pecan smoke cuts through the sweet.

Honey & Citrus

Honey Bourbon · Dried Orange · Glencairn
Alabama honey finished in a honey cask. Pair it with dried citrus and a proper glass—this one's meant to be studied.

Garden Party

Old Fashioned · Orange · Afternoon Light
Proof that bourbon doesn't need a dark bar to feel at home. Afternoon light, good glass, nowhere to rush.
